BREAD

AUNT LYNDA'S ROLLS

Mix Together and set aside: (this will foam)
4 Tbs of Yeast or 4 pks
1 C warm Water
2 Tbs Sugar

In another bowl combine and microwave for about 60 seconds:
2 C Milk
1 cube Butter

Combine All the above and add:
2/3 C Sugar
4 tsp. Salt

Stir in:
6-8 C Flour
Begin to knead dough (or use a Bosch Mixer)

Let dough raise at least once before rolling into 2 inch balls. Place the balls onto a sprayed cookie sheet. Bake at 350* for 15-20 mins.

PIONEER MUFFINS

Combine: 2 C Boiling Water, 6 tsp. Baking Soda, 2 C shopped Dates or Raisins
(Mix and remove from heat. Set aside to cool)

Cream Together: 1 C Shortening (solid), 4 beaten Eggs, 2 C Sugar. Then add 5 C flour. Add to cooled date mixture and mix thoroughly.

Combine: 2 1/2 C 100% Bran Flakes and 1 Quart buttermilk. Add 1 C chopped Nuts to bran mixture and combine all ingredients. Mix thoroughly.

Fill muffin tins 2/3 full and Bake 18 minutes (check as you would a cake) at 400*. Makes 3 quarts muffins mix (4 dozen). Will keep in fridge without baking for one month. Serve with honey butter.
